1 tbsp green cardamom pods
2 tbsp rose petals (fresh or dried)
1 pinch saffron strands (optional)
3 tbsp sugar (adjust to taste)
¼ cup water (for blending)

For Thandai Drink:
1 liter full-fat milk (chilled)
2 tbsp rose water (optional)
Chopped nuts & saffron (for garnish)

Instructions:

1. Blend all wet masala ingredients with ¼ cup water until smooth.
2. Stir 2-3 tbsp of wet masala into a glass of chilled milk. Mix well.
3. Strain if desired for a smoother texture.
4. Add rose water, mix, and pour into glasses.
5. Garnish with chopped nuts and saffron. Serve chilled!

1/2 cup jaggery (grated)

1/2 tsp cardamom powder

Method:

1. In a pan, mix grated coconut and jaggery. Cook on low heat until the jaggery melts and blends with the coconut. Add cardamom powder and mix well. Set aside.

2. In a bowl, whisk flour, water, salt, and sugar into a smooth batter. It should be of flowing consistency.

3. Heat a non-stick pan and lightly grease it. Pour a ladleful of batter and spread it thinly like a crepe.

4. Cook on low heat until the edges lift slightly. No need to flip.

5. Place a spoonful of the coconut-jaggery filling in the center, fold the sides, and roll into a cylindrical shape.

Ingredients:
1 bottle of red wine
2 oranges (1 sliced into rounds; 1 juiced)
120ml cup brandy
1/4 cup sugar (adjust to taste)
2 cinnamon sticks
5-6 whole cloves
3-4 star anise

Method:
To prepare mulled wine, start by heating half bottle of red wine, freshly squeezed orange juice, and sugar in a large pot, stirring gently to dissolve the sugar, add orange slices, cinnamon sticks, cloves and star anise over low heat and warm the mixture gently. Allow the wine to simmer for 15-20 minutes, stirring occasionally to release the aromas of the spices. If desired, stir in brandy and let it heat through for an additional 2-3 minutes. Taste the mulled wine and adjust the sweetness as needed. Finally, strain the mixture into heatproof mugs or glasses, garnishing with a cinnamon stick, a slice of orange, or a sprig of rosemary for a festive touch. Enjoy warm!

3 slices of king fish
15 cloves garlic
Ginger (to taste)
3 dry red chilies
1 tsp black pepper
1/2 tsp fenugreek seeds
1 tsp cumin seeds

Coriander leaves (a handful)
Soaked tamarind (to taste)
Salt (to taste)
1 tsp coriander powder

Start by soaking some tamarind in water to soften it. In a blender, combine the soaked tamarind, garlic, ginger, dry red chilies, black pepper, fenugreek seeds, cumin seeds, fennel seeds, and coriander leaves, and blend everything into a smooth paste, adding a little water if needed. Season the fish slices with salt and coat them with a portion of this spice paste, letting them marinate for 10-15 minutes. In a pan, heat some oil and gently place the marinated fish slices in the pan, and cook on low heat until the fish is tender.

1 slice of cheese (per Pao)

Instructions:
In a mixer grinder, coarsely grind the green chilies, garlic cloves, and coriander leaves with a pinch of salt. Heat a pan with butter and briefly sauté the mixture until aromatic. Slice the Pao, spread the cooled Thecha inside, add a slice of cheese, and toast lightly with butter if desired. Serve fresh and enjoy the spicy, cheesy kick!
