Prawns Masala Fry Recipe

Updated: Sep 22, 2024

Prawns are hands down my favorite seafood: I could eat them every day! I would run to the kitchen with excitement whenever my mom brought home fresh prawns. I would take all the spices I could find and combine them with the prawns and then fry the prawns in some hot coconut oil. Since then, that easy recipe has evolved into my all-time favorite prawn dish; it's the ideal balance of comfort, nostalgia, and flavor.

My Prawn Obsession

I used to get excited when I saw fresh prawns arrive at home as a child. Every time my mom would bring them home from the neighborhood market, I would be bursting at the seams to get inside the kitchen. Prawns weren’t just a meal; they were an experience I relished being part of.

I used to search through the spice cabinet in my early cooking attempts, excited to make something tasty. My goal was to enhance the flavor of the prawns even more than I had the previous time. I would combine any masala I could find, such as garam masala and turmeric, tasting and adjusting the recipe until it tasted just perfect.

Coconut Oil: The Magic Ingredient

There’s something truly special about frying prawns in coconut oil. Coconut oil was a mainstay in our cuisine growing up, and the subtle sweetness of the prawns goes well with its rich, nutty flavor. Even now, when I hear the sizzle of prawns striking a hot pan of coconut oil, it brings back happy memories of my carefree culinary beginnings.

Ingredients Recap

  • Prawns - 500 gms

  • Lime Juice - 1 lime

  • Tumeric Powder - 1Tsp

  • Chilli Powder - 2 Tsp

  • Coriander Powder - 1Tsp

  • Curd - 2Tbsp

  • Curry Leaves – a few (optional)

  • Salt to taste

  • Oil for Frying

Instructions:

Step 1:

Clean and De-vein the Prawns: Clean the prawns and then de-vein them, then wash the prawns thoroughly at least 3-4 times.

Step 2:

Marinate the Prawns: Marinate the prawns with lime juice, chili powder, turmeric powder, coriander powder, curd and salt. Mix everything well and let it sit for 15 minutes.

Step 3:

Fry the prawns: In a pan add some coconut oil, once the oil is hot add the curry leaves and the marinated prawns.

Step 4:

Let them Cook: Fry the prawns on a medium flame for around 10 minutes.

Step 5:

Garnish and Serve: Before serving, garnish the prawns with chopped curry leaves and lime.

Tips for Perfect Prawns Masala Fry:

  1. For best results marinate the prawns overnight in the refrigerator.

  2. Do not overcook the prawns, else it will have a rubbery texture.

  3. Do not forget to de-vein the prawns

Why This Dish Stands Out

What makes this prawn recipe so special isn’t just the taste—it’s the nostalgia and joy that comes with it. Every time I make it, I’m reminded of my younger self, excitedly tossing spices together without any fear of making mistakes. Cooking became my creative outlet, and this prawn dish is the result of that journey.

The use of coconut oil gives the prawns a unique depth of flavor that’s hard to replicate with other oils. The spices infuse the prawns with warmth and a slight kick, while the curry leaves add a fragrant, fresh note that completes the dish. It’s comforting, flavorful, and always hits the spot.
